Apple-Berry Crumble Pie

Preparation and cooking time: 40 minutes. Serves 6.
This simple crumble pie is delicious with low fat créme fraiche or low fat yoghurt.

Ingredients:

  • - 175g Scott's Porage Oats
  • - 150g plain flour
  • - 125g brown sugar
  • - ½ tsp bicarbonate of soda
  • - 175g butter or cooking margarine
  • - 2 x 385g cans apple pie filling
  • - 75g dried cranberries
  • - 1 tbsp lemon juice
  • - ½ tsp ground cinnamon

Method:

Preheat oven to 190C, 375F, Gas Mark 5. Lightly grease a 20cm loose bottomed cake tin or metal pie dish. In a large bowl mix the Scott's Porage Oats, flour, sugar and bicarbonate of soda together. Stir in the melted butter and mix well

Press two thirds of the crumble mix into the base and sides of the tin.

Mix the pie filling, cranberries, lemon juice and cinnamon together. Spoon into crumble shell keeping filling away from sides of tin. Starting at the edge and working into the centre, cover with remaining crumble mixture. Firm gently around edges to seal top to sides of crumble shell.

Bake for 30 minutes. Cool in tin for 1 hour before turning out or eat straight away!
